Ingredients of Simple Jollop Spaghetti

  1. Prepare of Spaghetti.
  2. Prepare of Pepper mix (tomatoe,red peppers, scotch bonnet, blended).
  3. You need of Vegetable oil.
  4. You need of Sliced Onions.
  5. You need of Seasonings.
  6. Prepare of Ginger, garlic, thyme and curry powder.

My goal in making this jollof spaghetti recipe was to make sure it tasted like jollof, not spaghetti and sauce, and if I have to say so myself: I nailed it. Jollof spaghetti is a delicious alternative to everyday Nigerian Jollof rice. A simple dish of spaghetti and tomato sauce, in this case, buka stew and other pantry staple. Jollof spaghetti is spaghetti cooked in tomato sauce and spices just like one would cook jollof rice but using spaghetti instead.

Simple Jollop Spaghetti instructions

  1. Parboil the spaghetti to reduce the starch, drain and set aside..
  2. Put the pot for the lollop on medium low heat, pour in the veg. Oil..
  3. When the oil heats up, add in sliced onions and fry for some minutes..
  4. Add in pepper mix, stir in to combine. Cover and allow to cook for 5mins..
  5. Once the sauce is reduced, pour in the seasonings, thyme, curry, ginger and garlic. Taste the sauce and adjust for salt..
  6. Add in enough water to cook the spaghetti, not too much. Add in the spaghetti into jollop base. Combine it into the base sauce properly, cover and allow to cook..
  7. Serve hot...

Some people also call it spaghetti jollof or Jollof. The number one rule for me is that the spaghetti cannot be soggy. Aren't no one gat time for that. Jollof Spaghetti is quite easy to prepare and can be made with or without vegetables. In the recipe below, I'll show you how I prepare mine with common vegetables.
